#8 Franchise or Your Own Restaurant?

A franchise is fast but fixed. Your own place is free but was hard. Was.
Using AI built into a SaaS product is like joining a franchise. Fast to start. Nothing to configure. Pretty useful. But you can't change the menu, can't modify the recipe, can't adapt to individual situations. You're limited to what the platform decided.
Building your own AI agent is like opening an independent restaurant. You define the menu. Connect the tools you want through MCP. Design workflows around your actual work. Change it tomorrow if you need to. The tradeoff used to be obvious: independence costs too much. That cost just collapsed. The difficulty of building your own dropped dramatically — and the choice is shifting.
What a Franchise Gives You
Everything is ready. Recipes are set. Supply chain is built. Interior design, uniforms, POS system — all provided. Train your staff on the manual and you're open next week. Fast, easy, lower risk. Hundreds of locations have already proven the system works.
Six months in, you start to feel the limits. A customer asks for spicy sauce with the chicken. "Sorry, standard sauces only." The manager thinks "our neighborhood loves spicy food," but nothing changes without headquarters' approval. You can't change the recipe. You can't switch suppliers. You can't redesign the atmosphere. A franchise is a system that works well within fixed boundaries — not a system you can shape.
What Independence Gives You
An independent restaurant gives you total freedom. You design the menu. You develop the recipes. You pick the suppliers. If your neighborhood loves spicy food, you add a spicy dish tomorrow.
The catch was always the same: you had to do all of it yourself. Develop the recipes. Build the supply chain. Set up the kitchen. Train the staff. Design the service flow. Everything the franchise handed you on a plate, you built from scratch. That's why most people chose franchises — not because they didn't want freedom, but because doing it all yourself was too hard.
Then the Barrier Collapsed
Kitchen equipment got cheaper. Ovens that cost a fortune got replaced by compact combi ovens. Recipe development got faster — months of research compressed into days. Connecting to suppliers got simpler — instead of individual contracts with every vendor, one standard interface connects them all.
The same thing happened with AI agents. Building one used to require a full engineering team. Now MCP provides a standard interface to connect any tool. Skills can be written and shared. Subagents handle delegated tasks. The infrastructure that used to take months to build is available out of the box.
Paying franchise fees and accepting constraints may now cost more than building your own. And the quality can be higher — because you're serving exactly what your customers need.
Picking the Right Expert for Each Job
Open your own restaurant and you quickly learn: cooking isn't the only job. You need a photographer for menu shots, a marketer for Instagram, an accountant for taxes, someone to handle reservations. You can't hire all of these full-time. So you outsource — photographer A does the best food shots, agency B fits your style for social media, system C handles reservations. You assemble the combination that fits your restaurant.
You don't ask the food photographer to do your taxes. Each expert gets the work they do best.
AI agents work the same way. Claude is strong at text analysis, so you use Claude for that. A different model handles image generation better, so you use that one. Yet another for video. Same principle — best expert for each job, assembled into your system. A franchise gives you headquarters' photographer, headquarters' marketing playbook, headquarters' system. An independent restaurant lets you pick.
